The cognac history

The history of cognac started in the 1st century a.c. when Romans brought the tradition of vine cultivation to France. The creation of Saintonge vineyards happened during the ruling of the Roman emperor Probus that gave additional rights to all Gaul who had or cultivated vines. First vine was cultivated only near the river Ron but with the lapse of time it spread all over France. And by the end of 4th century the whole France was enjoying the French wines.
And in 16 century, France turned into the main producer and exporter of wine in Europe. The Dutch ships came to the region Cognac to get world-known wines and to the region Champagne, Borderies to get famous champagne drinks. The vineyards of Aunis had so much harvest and as a result gave so much wine that it became rather difficult to transport it as not rather strong alcoholic wines lost their alcohol during the long-lasting sea voyages. Besides, during the transportation to hot countries wine simply was spoiled by the sun. That is why the French wine-makers decided to use the process of distillation that was very rare at that time. They thought that the costumer will get the same wine if he/she is going to mix the cognac spirits with the water. But wine-makers liked the taste of the got spirits. So they started to mix it with water and named it brandjiwin.
It is rather difficult to say exactly how the real cognac appeared. There are several theories that try to explain it. And some of them turned into rather interesting legends.
